I went to my In-Laws for a Father’s Day dinner last night. They made this delicious dish and everyone loved it! My kids insisted I get the recipe, and I assured them I already had. I was pleased to find out that it was quite easy and fast to make, bonus! I have not made it myself yet, but I couldn’t wait to share it. I have met many gluten free people who are also diabetic or sensitive to refined sugar and are looking for sugar free recipes. Upon request I made the Sugar Cookies using Splenda to see how well UNflour would work without sugar. I am pleased to announce that they turned out great. They are a tad more flakey than usual, but they looked and tasted beautiful.

Have you ever had Sweet Pork at a restaurant like Costa Vida or Cafe Rio? All too often it is not gluten free, or has been contaminated.
