I have had a few people email and ask me if there is a way to make UNflour without corn. Cornstarch is a key ingredient, so I was not sure how it would work.

Then I got a call from a dear friend last week who found she is allergic to both gluten and corn. She said she was “starving” and I believe her. So I tried making a couple of recipes from Irresistibly Gluten Free without cornstarch.

I made the Corn-Free UNflour by following the recipe on page 12 of Irresistibly Gluten Free. I used brown rice flour, and instead of using cornstarch, I replaced it with potato starch, (and used the normal amount of tapioca flour.)



I tried the Waffle recipe and the Roll recipe using this flour. I was happy to see they both turned out. They tasted great. The texture was a little gummy when first out of the oven (or waffle iron) but once cooled they had a moist, bready texture.



I did have to add a bit more liquid than usual to get the same consistency in the mixer. So I would suggest you start with what the recipe calls for and then add a tablespoon at a time to get a “thick cake batter” consistency.

Because it does seem a little more starchy, I would also try adding some Flaxseed meal next time. But for those who can’t have corn I think this alteration is a great solution.

    Hi,
    I was doing a search for Gluten and corn free products/recipes and came across your site. Thanks for posting those options. Have you since come up with any additional recipes or have you ever seen a gluten free and corn free pretzel? That’s what I was looking for, for my son who also has many other GI intolerances with a diagnosis of Fructose Malabsorption.
