Move over pumpkin pie! This Pumpkin Cobbler just bumped pie out of fist place for Thanksgiving dessert for me. Not only is it easy to make, but it can be made milk (casein) free as well. My kids gobbled it up so fast I almost didn’t get a picture.

I love nachos, but so many restaurants just don’t get it right. My husband and I developed this recipe the fist year we were married, and I still think we hit the nacho jackpot. The magic is in the cheese I think. Monterey Jack is perfect with chicken, cilantro, and avocado!
