Here is a favorite little trick I do to make easy meals that are under $10 each. It all starts with a Jennie-O Blue Ribbon Oven Roasted Shaving Turkey Breast which I buy at Sam’s Club.
It is a pre-cooked, gluten-free turkey roast I usually find near the spiral-cut hams and sliced cheeses.

I bring that baby home and cut it into bite-sized pieces. I put about 3 cups of cubed turkey into 10 ziplock freezer bags and put them in the freezer.

Now I have the meat for 10 dinners pre-cooked and ready to add to my favorite recipes. With the turkey breast costing me about $2.50 lb I am spending only $2.60 on meat per meal. After adding rice, pasta, potatoes, or vegetables to the meal, it is usually under $10 for the whole meal!
You can use the cubed turkey in a lot of different recipes. It’s great in soups, casseroles, pasta dishes, and salads. Most recipes calling for chicken often are great with this turkey. Here are some favorite meals I have made with the cubed turkey:

Sweet and Sour Turkey
Ingredients:
3 cups cubed turkey roast
1 (20 oz) can pineapple tidbits (reserve juice)
1 (6 oz) can 100% pineapple juice
1/2 cup apple cider vinegar
1/2 cup brown sugar
1 teaspoon salt
3 tablespoons cornstarch
2 tablespoons oil (vegetable or canola)
1/2 cup minced onion (or 3 tablespoons dried onion flakes)
2 tablespoons gluten-free soy sauce
Directions:
- In a large sauce pan heat oil and cook onion for 2 minutes (unless you are using dried onion, those can just be added to the sauce when making it later.)
- Add to the pan the reserved pineapple juice, the can of pineapple juice, vinegar, sugar, salt and cornstarch. Stir well to remove lumps from cornstarch.
- Heat on medium heat, stirring constantly until sauce comes to a boil and thickens. Add in cubed turkey, soy sauce, and pineapple tidbits (and dried onion if using dried flakes.) Stir to combine well. Heat until meat is warmed through.
- Serve over steamed rice.

Turkey Gravy and Mashed Potatoes
Using this gravy recipe, you can make a terrific Turkey and Gravy to serve over mashed potatoes. Follow the directions for the gravy, then add the cubed turkey and serve over mashed or even baked potatoes.
Creamy Turkey Shepherd’s Pie
Using the Shepherd’s Pie recipe I make a delicious Turkey version.
Ingredients:
4 cups mashed potatoes (5-6 potatoes peeled, boiled and mashed, or about 2 cups Instant Mashed Potato flakes prepared according to directions.)
2/3 cup Cream Soup Mix (see page 14 Irresistibly Gluten Free)
2 cups water
1 can vegetables or mixed vegetables of your choice, drained
2 cups shredded cheese
Directions:
- In a saucepan mix the Soup Mix and water. Follow directions for making soup in Irresistibly Gluten Free cookbook. Add 1/2 cup sour cream and stir to combine. Set aside.
- Spray a 9 x 13 inch baking dish with cooking spray. Spread mashed potatoes to evenly cover the bottom.
- Top potatoes with cubed turkey, canned vegetables, and shredded cheese. Cover with foil and bake at 350 degrees for 50-60 minutes, or until cheese is melted and sauce is bubbly.
