Fruit Pizza is a fun and attractive treat you can make for any special occasion. It is quite simple to make, and always received with great enthusiasm, because, hey, it’s Pizza!

Using the Sugar Cookie recipe from Irresistibly Gluten Free (page 62) make the crust by following steps 1 through 4.
Roll the dough out large enough to cover your round pizza baking sheet (or heart shaped pan.) Transfer dough to a well greased pizza sheet and then trim off any excess.
Bake at 350 degrees for 20-25 minutes or until bottom of crust is a light, golden brown. Remove from oven and allow to cool.
Frosting:
1 (7 oz) jar marshmallow creame
1 (8 oz) package cream cheese, softened.
2 teaspoons pineapple juice reserved from canned pineapple.
Once cookie crust is cool, spread the frosting evenly over the cookie, and then top with fruit:
Mandarin oranges
Pineapple tidbits
Strawberries
Blue berries
Cut with a pizza cutter and enjoy!
