As much as I love the pizza in Irresistibly Gluten Free, I just had to try making a Chicago Style Pizza.

The crust turned out great, and the whole family loved it. I can’t wait to try it with different toppings and cheeses!

The beauty of this pizza is that I can double the recipe and make 2 pizzas (9 x 13 inch each) and bake enough pizza for my gargantuan family all at one time!


Ingredients:

1 1/4 cup UNflour

1/2 teaspoon xanthan gum

1 teaspoon onion salt

1/2 teaspoon garlic powder

1/8 teaspoon pepper

2/3 cup milk

2 eggs

1 lb Italian ground sausage, cooked and well drained

3 oz  pepperoni slices

1 large tomato, sliced

1/4 cup chopped onion

2 tablespoons chopped bell pepper

1 1/2 cups spaghetti sauce (check for gluten free)

2 cups (about 1/2 lb) mozzarella cheese, shredded

 

Directions:

  1. Pre-heat oven to 425 degrees F. Spray a 9 x 13 inch baking dish with cooking spray, set aside.
  2. In bowl of mixer combine UNflour, xanthan gum, salt, garlic powder, pepper, milk and eggs. Mix until smooth. Pour into prepared dish and spread to cover the bottom of the dish evenly.
  3. Top uncooked dough with cooked and drained sausage, pepperoni, onion, bell pepper, and tomato slices. Then top with sauce and finally cheese.
  4. Bake for 25-30 minutes. Allow a few minutes to cool before slicing.
