This Asian Rice Pilaf is an excellent side dish. The rice is flavorful, and compliments many main dishes so well. I often make it with baked chicken, or anything that does not have a sauce or gravy.

And since I have a tight relationship with my rice cooker, it fits into my life nicely!

I had to go out of town so I made two pans of Lasagna. One pan was gluten-free and the other was not. The only difference was that I used Tinkyada Lasagna Noodles in the gluten-free Lasagna. I got a phone call from my husband who couldn’t tell which was which. “They taste exactly the same!”

Luckily I had marked the bottom of the pan with a big “GF!”

If I had known how easy it is to make this breaded chicken, I’d have been making it years ago! This Yogurt Chicken has such a nice flavor, with a little zing from the yogurt and lemon.
