One of my favorite things about this time of year is making Christmas candy with my kids. This recipe was especially fun, no cooking required and my kids had a great time rolling the Peanut Butter Balls.

 Ingredients:

1/4 cup butter (or butter substitute) slightly softened

1 1/2 cups creamy peanut butter

4 cups powdered sugar

1 teaspoon vanilla

1 teaspoon maple flavoring

1/2 cup honey



Directions:

  1. Put all  ingredients in the bowl of a heavy mixer. Mix well, until it forms a ball in the mixer.
  2. Remove and knead by hand until smooth.
  3. Roll dough into desired sized balls. Roll in chopped peanuts or dip in melted chocolate.

To dip in chocolate: 

Pour a bag of chocolate chips into a glass, microwave safe bowl and microwave for about 30 seconds, stop and stir. Repeat until all chips are melted and stir smooth.

Dip each Peanut Butter Ball in the melted chocolate and set on wax paper to cool.

Note: To make chocolate dipping easier, break the inner teeth off of 2 plastic forks and use one in each hand to dip and drain the chocolate as seen here.
