My youngest doesn’t like chocolate, so I had to find a new kind of cookie for him to enjoy other than chocolate chip cookies. Since he loves Banana Bread, I thought I should try making a Banana Cookie. Well, it was a hit!
The fact that these cookies were simple, tasty, and easily made dairy free made them a shoo-in for the website.
3 cups UNflour
1/2 cup cornstarch
1 teaspoon xanthan gum
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoon baking soda
1 cup sugar
1 cup butter (or dairy-free butter substitute)
1 teaspoon vanilla
1 cup mashed, ripe banana
1/2 cup chopped pecans or walnuts
1/4 cup sugar (for coating)
- Pre-heat oven to 350 degrees. Grease cookie sheet or line with parchment paper, set aside.
- Put all dry ingredients into bowl of mixer. While mixing on low, add wet ingredients. Mix until well mixed. Dough should form a ball in the mixer.
- Roll about a tablespoon of dough into a ball to form each cookie, then roll in sugar and place on prepared cookie sheet.
- Bake for 10-12 minutes, allow to cool on cookie sheet up to 5 minutes before removing to cooling rack.
