My youngest doesn’t like chocolate, so I  had to find a new kind of cookie for him to enjoy other than chocolate chip cookies. Since he loves Banana Bread, I thought I should try making a Banana Cookie. Well, it was a hit!

The fact that these cookies were simple, tasty, and easily made dairy free made them a shoo-in for the website.

Ingredients:

3 cups UNflour

1/2 cup cornstarch

1 teaspoon xanthan gum

1 teaspoon baking powder

1/2 teaspoon salt

1 1/2 teaspoon baking soda

1 cup sugar

1 cup butter (or dairy-free butter substitute)

2 eggs

1 teaspoon vanilla

1 cup mashed, ripe banana

1/2 cup chopped pecans or walnuts

1/4 cup sugar (for coating)

 

Directions:

  1. Pre-heat oven to 350 degrees. Grease cookie sheet or line with parchment paper, set aside.
  2. Put all dry ingredients into bowl of mixer.  While mixing on low, add wet ingredients. Mix until well mixed. Dough should form a ball in the mixer.
  3. Roll about a tablespoon of dough into a ball to form each cookie, then roll in sugar and place on prepared cookie sheet.
  4. Bake for 10-12 minutes, allow to cool on cookie sheet up to 5 minutes before removing to cooling rack.
