I’ve found my zen!

Beef and Broccoli has always been a favorite of mine. I’ve tried making it a few times ¬†before, and never found it quite as good as it is in a nice chinese restaurant. (Could be because I leave out all the MSG?)

But this recipe hit the mark. The beef is tender and the sauce has just the right flavor, and the broccoli fits in so harmoniously. The perfectly balanced meal to bring comfort and peace. Ahh.

This recipe is also Dairy (casein) Free.

3 lbs beef sirloin, thinly sliced into strips

1 pound broccoli, separated into florets

4 tablespoons gluten-free soy sauce

4 tablespoons cornstarch

1 tablespoon minced garlic

2 teaspoons sugar

1 teaspoon ground ginger

1/4 teaspoon black pepper

2 tablespoons Toasted Sesame Oil for frying

Sauce:

2 cups beef (or chicken) broth

2 teaspoons rice or apple cider vinegar

4 tablespoons gluten-free soy sauce

3 tablespoons cornstarch

1/2 teaspoon crushed red pepper

 

Directions:

  1. Slice beef into thin strips, laying on paper towels to dry until all meat is cut.
  2. Combine soy sauce, cornstarch, garlic, sugar, pepper, and ginger. Stir until smooth.
  3. Marinate beef strips in soy sauce mixture 10-20 minutes.
  4. While beef is marinating, combine sauce ingredients, stirring until smooth. Set aside.
  5. Steam broccoli florets until just tender when pierced with a fork. Set aside. (Be sure broccoli is not mushy or it will fall apart in the sauce.)
  6. Heat oil in wok or non-stick frying pan and add the marinated beef strips. Toss while frying until meat is cooked, but still tender (about 5-8 minutes.)
  7. Add sauce mixture to cooked beef and cook on medium heat, stirring constantly until sauce boils and thickens.
  8. Add steamed broccoli to beef and sauce mixture, stir to coat evenly. Serve over steamed rice.
