This is one of my favorite side dishes. It goes great with chicken, steak, or fish. It is fresh and sweet, but not too sweet to round off a fantastic dinner. I don’t think I have ever served this dish without being asked for the recipe, so, to make it easy for both of us, here it is.

This Rice Pilaf is made in your Rice Cooker or Pressure Cooker, so it is super convenient.

IMG_4092In Rice Cooker or Pressure Cooker Combine:
2 1/2 cups uncooked long grain white rice
1/2 cup uncooked wild rice
Water (To the 4 line of a rice cooker, and to the 6 line on a pressure cooker.)
1/2 teaspoon garlic powder
1/2 teaspoon onion salt
1/4 teaspoon allspice
2 tablespoons dried onion flakes

Cook rice. When rice is done, stir to fluff. Leave cooker on warm, set aside.

After Rice is Cooked, Stir in:
1/2 cup chopped pecans
1/2 cup dried apple pieces
1/2 cup dried cranberries
1/2 cup orange marmalade
1/4 cup frozen apple juice concentrate

Mix the apple juice and marmalade together and pour over rice. Add in nuts and fruits and stir to mix well. Leave rice cooker on “warm” until ready to serve.

Note: For my own benefit, I am reminding myself that when doubling this recipe in the rice cooker: 5 cups rice, 1 cup wild rice and fill to the 9 line. Thanks me.
