Sweet and Salty like you’ve never tasted before! With Malt-o-Meal Cereals taking their Crispy Rice gluten free, we’ve been on a rice crispy treat frenzy around here. Sunday nights are now Rice Crispy Treat Night thanks to my daughter and my husband. I find this a worthy hobby, and highly recommend it remains a tradition.
This recipe is the favorite so far!
1 cup butter
1 cup brown sugar
1/2 cup heavy whipping cream
2 tablespoons light corn syrup
2 teaspoons flaked or coarse sea salt
1 (16 oz) package mini marshmallows
7 cups gluten-free crispy rice cereal
1. Prepare 9×13 baking dish with cooking spray. Put cereal into large mixing bowl, set aside.
2. Melt butter in saucepan over med-high heat. Stir in brown sugar, cream, and corn syrup. Stir while cooking for about 7 minutes, (or until mixture becomes thick.) Remove from heat, stir in 1 1/2 teaspoons salt and the marshmallows, stir until marshmallows are smooth and melted.
3. Pour caramel mixture over cereal and stir to coat evenly. Transfer to baking dish and press with greased parchment paper. (I like to use the wrapper from the butter if I remembered to not throw it away!) Sprinkle top with remaining 1/2 teaspoon salt. cool and cut into squares.
