Want to make a good dinner great? Just jazz it up with this Coconut Lime Rice! We love it as a side dish, for instance, with Grilled Lime Chicken and Shrimp or Yogurt Chicken, or used to replace plain steamed rice in Sweet Pork Tacos , Teriyaki Rice Bowels or your favorite taco salad. You’re never gonna want plain rice again!

I have included the recipe and instructions for making this amazing rice in a Pressure Cooker, or in a Rice Cooker for your convenience. (Okay, truth be told, for my convenience, when one or the other needs washing!)

In Quisinart Pressure Cooker:

4 cups white rice
Zest from 1 lime
Juice from 1 lime
1 can (about 14 oz) light coconut milk

1/2 cup chopped cilantro
2 cans (about 3 1/2 cups) chicken broth plus water to the 9 line of pressure cooker
2 tablespoons butter

Cook on High pressure for 3 minutes, then let steam 10 minutes before releasing pressure.

Stir to fluff and serve.

 

In a Rice Cooker:

5 scoops white rice using rice cooker measuring cup
Zest from 1 lime
Juice from 1 lime
1 can (about 14 oz)  light coconut milk

1/2 cup chopped cilantro
1 to 2 cans (or about 3 cups) chicken broth to bring it to between the 5 and 6 line of rice cooker
2 tablespoons butter

Cook on White Rice setting.

Stir to fluff when done.
